Colombia’s reputation as a global coffee superpower begins with its extraordinary geography. Straddling the equator and intersected by three ranges of the soaring Andes mountains, the country boasts a unique set of microclimates that seem almost tailor-made for growing premium Arabica beans. High altitudes—often sitting between 1,200 and 2,000 metres—combined with nutrient-rich volcanic soil, particularly nearby the Nevado del Ruiz, and a perfect balance of rainfall and sunshine, allow the coffee cherries to mature slowly. This unhurried growing process is crucial, as it gives the beans time to develop the complex, nuanced sugars that eventually create their signature depth of flavour.
Beyond the perfect terrain, the secret to a great Colombian brew lies in its deeply rooted farming traditions. Because the coffee plants are cultivated on incredibly steep, rugged hillsides, mechanical harvesting is virtually impossible. Instead, the crop is meticulously hand-picked by skilled farmers, known as cafeteros, who navigate the tricky slopes to select only the ripest red cherries, leaving the green ones on the branch to mature. My granny made a living for a while picking up coffee bean cherries. Her shifts were normally from sunrise to sunset. Pay was minimum but somehow enough. Being pregnant was not a deterrent at all, she was one of the most efficient pickers.
This labour-intensive quality control guarantees that bitter, underripe beans never make it into your morning cup. The freshly picked beans are then put through a 'washed' process to remove the fruit before drying, resulting in a remarkably clean and consistent final product.
All this meticulous effort culminates in a flavour profile that is famously smooth, well-balanced, and a firm favourite in British homes and independent cafés like Cafe Nort. A classic Colombian roast typically sings with comforting notes of sweet caramel, milk chocolate, and nuts, lifted by a subtle, fruity acidity that never feels overly sharp.
